Bloody Mary Chicken

Bloody Mary Chicken (crockpot)

4 skinless, boneless chicken breast halves

1 (32 ounce) bottle bloody mary mix

Wash, skin and remove fat from chicken breasts and place in a slow cooker. Pour Bloody Mary mix over the chicken breasts, turn slow cooker to low and cook on low for 8 hours.

Baked Chicken Breasts Supreme Diabetic Recipes


Diabetic Chicken Recipes



1 1/2 cups plain yogurt or sour cream
1/4 cup lemon juice
1/2 teaspoon Worcestershire sauce
1/2 teaspoon celery see
1/2 teaspoon Hungarian sweet paprika
1 garlic clove, minced
1/2 teaspoon salt (optional)
1/4 teaspoon pepper
8 boneless, skinless chicken breast halves
2 cups fine dry bread crumbs

In a large bowl, combine first eight ingredients. Place chicken in
mixture and turn to coat. cover and marinate overnight in the
refrigerator. Remove chicken from marinade; coat each piece with crumbs.
Arrange on a lightly greased shallow baking pan. Bake, uncovered, at
350ºF for 45 mins or until juices run clear. Makes 8 servings.
Nutrition info per serving: 271 cals, 293 mg sod, 76 mg chol, 22 g carb,
32 g protein, 5 g fat.
Diabetic Food Exchanges: 3 1/2 lean meat; 1 starch; 1/4 skim milk.

Chicken Rotel Recipes

Rotel brand tomatoes and chilies are a very popular staple in Southwest
Louisiana. That brand of tomatoes is used in so many Cajun dishes, that many
of us just say add the Rotel....To define, Rotel is a 10-ounce can of diced
tomatoes and green chilies, packed in its own juice. It is sold as mild in a
green can although that version is nicely spicy and two different red cans
where you pick your speed of HOT. It is used in recipes, never by itself. If
you can't find the Rotel brand just look for a product that has diced
tomatoes and green chilies.

Ingredients
4 to 5 chicken breasts1 pound angel hair pasta
1 pound Velveeta cheese1 stick margarine
1 medium onion (chopped)1 can Rotel chilies and tomato

Directions
Boil the chicken in water to which salt and pepper has been added. Cool.
Boil the pasta in the chicken broth. Chop the chicken and mix with the
cooked pasta. Do not drain the pasta completely; leave some broth to add
moisture to the dish. Chop the onion and saute in margarine. Mix all
ingredients together in a 9 x l3 inch baking dish and bake at 350 degrees
for several minutes, until the cheese melts.

8 medium corn tortillas, cut into 4 wedges each
4 sprays olive oil cooking spray, or enough to coat tortillas
1/2 tsp. table salt
4 cups romaine lettuce, shredded
1 lb. chicken breast halves, cooked, skinless, shredded
1/2 cup shredded reduced fat Mexican cheese
1/2 cup fat-free sour cream
1/4 cup salsa
1/2 tsp. ground cumin, or Adobo seasoning
1 cup tomatoes, diced
1/2 tsp hot pepper sauce

Preheat oven to 400º F. Coat a large baking sheet with olive oil-flavoured cooking spray.

Arrange tortillas on baking sheet; spray tortillas with cooking spray and sprinkle with salt.

Bake until golden, about 10 minutes.

Arrange tortillas in bottom and up sides of 4 salad bowls. Divide lettuce, chicken, tomatoes
and cheese amongst four bowls.

Whisk together sour cream, salsa, cumin and pepper sauce. Drizzle about 3 tablespoons
dressing over each salad.

Quick Chicken and Pasta



2 quarts water
1/2 teaspoon salt
4 ounces vermicelli, uncooked
3/4 cup frozen English peas
1/3 cup Italian salad dressing
1 cup cooked chicken, chopped
1/4 teaspoon sweet red pepper flakes
2 tablespoons grated Parmesan cheese

In a large saucepan combine the water and salt; bring to a boil. Add the vermicelli
and the peas. Return to a boil; reduce the heat, and cook for 10 minutes. Drain and
set aside. Heat the salad dressing in a saucepan. Add the chopped chicken and
red pepper flakes, and cook, stirring constantly, 2 minutes. Add the reserved pasta
mixture, and cook until thoroughly heated. Sprinkle with Parmesan cheese, tossing
mixture well. Serves: 2.

Easy Chicken Wing Appetizers

18 chicken wings (about 3 lb.)
1 envelope Lipton® Recipe Secrets® Savory Herb with Garlic Soup Mix
1/2 cup water
2 to 3 TB hot pepper sauce, optional*
2 TB margarine or butter

1. Cut tips off chicken wings (save tips for soup). Cut chicken wings in half at joint.
Deep fry, bake or broil until golden brown and crunchy.

2. In a small sauce pan, combine soup mix, water and hot pepper sauce. Cook over
low heat, stirring occasionally, 2 minutes or until thickened. Remove from heat and
stir in margarine.

3. In large bowl, toss cooked chicken wings with hot soup mixture until evenly coated.

Serve, if desired, over greens with cut up celery.

Makes: 36 appetizers.

*Use more or less hot pepper sauce as desired.

Chicken Recipes - Crockpot Chicken - Crock Pot Oriental Chicken Wings

Crock Pot Oriental Chicken Wings

32 pieces chicken wing drums and flats
1 cup chopped red onion
1 cup soy sauce
3/4 cup packed light brown sugar
1/4 cup dry cooking sherry
2 TB chopped fresh ginger
2 cloves garlic, minced
Chopped fresh chives, optional

Preheat broiler. Broil chicken wing pieces about 5 minutes per side; transfer to
a crock pot/slow cooker.

Combine onion, soy sauce, brown sugar, sherry, ginger and garlic in large
bowl. Pour over chicken wings and stir to blend well.

Cover and cook on LOW heat setting for 5 to 6 hours or on HIGH heat setting
for 2 to 3 hours. Sprinkle with chives and serve.

Makes: 32 appetizers.

Whiskey Chicken - 25.55g Carbs

Serves 2
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 30 minutes

2 skinless, boneless chicken breast halves - cut into 1/2 inch pieces
2 Tbsp soy sauce
1/4 tsp garlic powder
1 cup pineapple juice
3 Tbsp bourbon whiskey
1/8 tsp ground black pepper
1 Tbsp brown sugar

1. Saute chicken in a large skillet over medium high heat until
cooked through (no longer pink).

2. In a small bowl, combine the soy sauce, garlic powder, pineapple
juice, whiskey, pepper and sugar. Stir until sugar is dissolved
and pour over chicken. Let simmer for 10 to 15 minutes, or until
sauce is thickened to taste.

Chicken Breast Recipes - Bourbon Street Chicken



4 chicken breasts
1 tsp. ground ginger
1/4 C. soy sauce
2 tablespoons dried minced onion
1/2 C. packed brown sugar
1/4 C. bourbon (to taste)
1/2 tsp. garlic powder

Preheat oven to 375 degrees F

Place chicken breasts in a 9x13" baking dish

Combine the ginger, soy sauce, onion flakes, sugar, bourbon and garlic powder and pour over chicken

Cover dish and place in refrigerator overnight

In a covered dish, bake in preheated oven, basting frequently, for 1 hour or until chicken is well browned and juices run clear. Also good on the grill!

Note: If you double the recipe, make sure that the chicken is still in a single layer. Serving 5

Southern Sweet Potato Chicken

Southern Sweet Potato Chicken
Serves 4

Ingredients:

4 skinned chicken breast halves
2 tablespoons vegetable oil
1 cup evaporated milk
2 tablespoons honey
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 16 oz. can sweet potatoes in syrup, drained, reserve 1/4 cup syrup
1/4 cup raisins

Procedure:

Preheat your oven to 350 degrees.

In large skillet, place oil and heat to medium temperature. Add chicken , cook, about 10 minutes or until lightly browned on both sides.

Drain chicken on paper towels and place in 13 X 9 X 2-inch baking dish.

In a small bowl, mix together evaporated milk, honey, salt, nutmeg and cloves. Pour over chicken. Bake for 10 minutes.

Remove from oven and arrange sweet potatoes and raisins around chicken. Pour reserved 1/4 cup syrup over chicken.

Return to oven and bake about 40 minutes or until fork can be inserted in chicken with ease.
