Chicken Recipes - Chicken Fajita Pizza Recipe - Chicken Fajita Recipe

Chicken Fajita Pizza Recipe

Ingredients:
1 tablespoon Oil
1 cup Bell Pepper -- Cut In Strips
2 Boneless Skinless Chicken Breasts -- Cut In Strips
1 package Pizza Crust Dough
1 Clove Garlic -- Pressed
1/2 teaspoon Chili Powder
1/2 cup Picante Sauce
1/2 teaspoon Salt
8 ounces Monterey Jack Cheese -- Shredded
1 cup Onion -- Thinly Sliced

Directions:

Heat oil in skillet over medium heat. When hot add chicken; stir-fry 5
minutes or until browned lightly. Press garlic and stir in with chili
powder, and salt. Add onions and bell pepper; stir-fry about 1 minute.
Heat oven to 425F degrees.

Spray pizza pan with nonstick spray. Unroll dough and place on pan.
Roll dough in 14 inch circle. Partially bake dough, about 8-10
minutes. Spoon chicken mixture over parbaked crust.

Spoon salsa over chicken; sprinkle with cheese. Bake 15-18 minutes or
until crust is golden brown.

Chicken Recipes - Chicken Lasagna

Chicken Recipes

Chicken Lasagna

a.. 2 cups chicken, cooked and diced
b.. 1 cup onion, chopped
c.. 1 can cream of mushroom soup
d.. 1 can cream of chicken soup
e.. 1 cup sour cream
f.. 1/2 cup green pepper, chopped
g.. 2 cups grated Mozzarella Cheese
h.. 1 pkg. lasagna noodles

Cook and drain the lasagna noodles according to package directions. Remove and lay flat to cool some. Combine all remaining ingredients except Mozzarella Cheese.
In an 9"x13" baking dish, layer by alternating chicken mixture, noodles, then cheese. The final layer should be the chicken mixture sprinkled with cheese. Bake at 350-degrees for 45 minutes.

Chicken Recipes - Tandoori Chicken Recipe - Tandoori Chicken

Tandoori Chicken

Ingredients
1 (2 to 3 pound) chicken, skinned and quartered
2 tablespoons lemon juice
1 teaspoon salt
4 teaspoons ground allspice
2 tablespoons plain yogurt
2 tablespoons lemon juice
2 tablespoons vegetable oil
2 tablespoons distilled white vinegar

Directions
1 Make cuts in the chicken flesh, almost to the bone. Pour 2 tablespoons of the lemon juice over the chicken and rub in the salt.
2 Combine the tandoori spice, yogurt, 2 tablespoons lemon juice, oil and the vinegar. Coat the chicken with the mixture, rubbing well into the cuts. Place the chicken in a 13x9 inch pan, cover with foil and refrigerate overnight, turning occasionally.
3 Preheat oven to 350 degrees F (175 degrees C).
4 Bake covered chicken at 350 degrees F (175 degrees C) for 1 hour. Remove foil the last 15 minutes of baking.
Makes 4 servings

Chicken Recipes - Teriyaki Chicken - Stir Fry Chicken Teriyaki ( Echo use Firm Tofu )

Stir Fry Chicken Teriyaki ( Echo use Firm Tofu )
Serves 4

This is an extremely EASY meal for any busy cook. Using purchased
sauces, you make a Chinese delicacy! Anyone can fix this!

5 boneless, skinless chicken breast halves/sliced into cubes or small strips
1 large onion
1 cup of mushrooms
1 large green pepper/sliced lengthwise
3 cups of broccoli/fresh or frozen
2 tablespoons of vegetable oil
1 jar Kikkoman teriyaki marinade
1 jar Kikkoman teriyaki baste/glaze
2 cups of cooked white rice

Heat a large skillet with oil and fry chicken until golden brown, then add
onions and cook until almost transparent.
Then add peppers and mushrooms and grill well.
Then add just enough marinade, until all is covered and stir for about 5
minutes on medium heat.
Then add teriyaki glaze until all is covered, stirring continuously and follow
by adding broccoli last for a more crisp taste/texture, let sit for about 5 minutes.
Serve over white rice.

Chicken or Steak Marinade

3/4 cup tequila 1 tsp cayane
1 dark beer 1 TBSP cumin
1/2 cup teriaki marinade 1 TBSP garlic puree
1/2 cup veg. oil Juice of 4 limes (6 oz)
12# chicken breast or 12/6oz steaks or steak strips.

Marinade several days if possible.

Chicken Recipes - Chicken Fricassee

chicken fricassee

1/4 cup flour
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 2 1/2 lbs. chicken pieces
1 teaspoon cooking oil
1 cup freshed halfed mushrooms
1/3 cup green or sweet red peppers or celery
1/3 cup green onion
1 cup chicken broth
1/4 teaspoondried basil, marjoram, oregano or thyme crushed
1/4 cup light cream
1 tablespoon flour
2 cups hot cooked noodles.

In plastic or papaer bag combine the 1/4cup flour, paprika, salt and pepper. Skin chicken, rinse. pat dry. Add chicken one piece at a time in bag and shake. In a 12 inche skillet cook chicken in hot oil about 15 minutes......remove chicken set aside.
drain fat, reserving 2 tablespoons of drippingsin the skillet (add more oil if desired)add mushrooms, green or red peppers or celeryand green onions to skillet. Cook and stir 2 minutes. stir in chicken broth and spice. Bring to boiling scraping up the browned bits from the bottom of skillet. Return chicken to the skillet. Bring to boinilng, reduce heat. Cover and simmer for 30 to 40 minutes or til chicken is tender and not pink. Transfer chicken and vegetablesto a platter. keep warm. Skim fat from pan juices, measure 3/4 cup of the pan juices and return to the skillet. Stir in cream or milk into the 1 tablespoon flour. Stir into pan juices. Cook and stir til thick and bubbly. Cook for 1 more minute. Spoon some of the sauce over chicken. pass remaining sauce serve with hot noodles. makes 6 servings

Chicken Recipes - Chicken Breast Hawaiian

CHICKEN BREAST HAWAIIAN


4 whole boneless skinless chicken breasts, halved
1/4 cup butter or margarine
2 tsp. chili powder
1/4 cup flaked coconut
1 egg slightly beaten
3/4 cup dry bread crumbs
1 tsp. salt
1/4 cup + 2 tablespoons shortning
4 pineapple slices
2 cooked sweet potatoes (quartered)
2 firm bananas, peeled and cut in half lengthwise

Sweet and Sour Sauce

2 tablespoons shortening
1/4 cup finely chopped onion
1/2 cup catsup
1/2 cup apricot preserves
1 Tbs. brown sugar
1 Tbs. cider vinegar
1/2 tsp. curry powder


Rinse and pat chicken dry. Place chicken between two pieces of
plastic wrap; flaten slightly. Cream butter and chili powder. Blend
in coconut. Divide into eight portions. Spoon one portion onto each
chicken piece. Tuck in sides; roll and skewer. Chill two hours.
Preheat oven to 400 degrees F. Dip chicken rolls into egg, then roll
in compined breadcrumbs and salt to coat evenly. Melt 1/4 cup of the
shortening in large skillet over medium heat. Add chicken rolls and
brown evenly on all sides. Transfer to greased shallow baking dish
and bake 20-25 minutes, or until chicken is tender. Remove skewers.
Melt remaining shortening in skillet over medium heat. Heat
pineapple, sweet potatoes, an bananas. Arrange with chicken rolls on
a searing platter and serve with sweet and sour sauce.
Sweet and Sour Sauce Instructions:

Melt shortening in small skillet over medium heat. Add onion; cook
until tender. Stir in catsup, preserves, brown sugar, vinegar, curry
powder, blend. Keep warm until served.

Chicken Recipes - Bourbon Chicken

Bourbon Chicken Recipe
(T = tablespoon)

1 T butter
2 T olive oil
1 clove garlic, minced
1 onion, chopped
4 skinless, boneless chicken breasts
2 T chicken stock
2 T bourbon
salt and pepper to taste

In a large skillet, melt butter or margarine and add olive oil. Saute garlic and onion until translucent. Remove garlic and onion from skillet with a slotted spoon.
Add chicken to breast halves to skillet and brown on both sides. Return garlic and onion to skillet. Add broth and bourbon and stir all together. Cover and let simmer over very low heat for 20-25 minutes, or until done. (when chicken juices run clear). Carol Sullivan

Chicken Recipes - Chicken Chow Mein - Slow Cooker

Chicken Chow Mein Crockpot

1 1/2 pounds boneless skinless chicken breasts, cut in 1" chunks
1 tablespoon of oil
4 stalks of celery chopped
4 carrots chopped
4 green onions chopped
1 cup of chicken broth
1/3 soy sauce
1/4 teaspoon red pepper flakes
1/4 teaspoon ground ginger
1 clove garlic minced
8 ounces beansprouts
8 ounces water chestnuts sliced
1/4 cup cornstarch
1/2 cup water

In a skillet brown the chicken in the oil....the step can be skipped if you
don't have the time...Put browned chicken in the crockpot, all all ingredients
except cornstarch and water. Stir, cover and cook on LOW for 6-8 hours. Before
serving turn the crockpot to HIGH . Mix cornstarch and water in a small bowl,
stirring until dissolved. Stir into the crockpot liquids. Keeping cover
slightly ajar to allow steam to escape, cook until thickened...15-30 minutes. Serve
over rich or chow mein noodles.

May be doubled for 5 qt. crockpots.

Chicken Recipes - Chicken Cacciatore - Slow Cooker

Chicken Cacciatore Crockpot

14 ounces tomato sauce - small can
10 ounces fresh mushrooms - sliced
Italian seasoning
6 chicken breast halves without skin
1/4 cup red wine
8 ounces pasta - cooked
garlic powder - optional

Spray crockpot liner with non-stick cooking spray
for easy clean-up. Place chicken in crockpot. Sprinkle
generously with seasoning. Put mushrooms on top of
chicken. Pour in tomato sauce and wine. Cook on
low for about 5 hours. If dish will not be served until
later, remove chicken and refrigerate. You can let
sauce continue to cook on low for several hours.
About 15 minutes prior to serving, return chicken
to pot. Serve over hot noodles of choice.

Chicken Recipes - Sloppy Joes

Sloppy Joes


Yield: 4 servings.

1 pound ground browned chicken , turkey or buffalo
1 medium onion
1 tablespoon mustard
1 tablespoon worcestershire
1 tablespoon sugar
1 tablespoon vinegar
3/4 cup ketchup
1 teaspoon salt
1/2 cup green pepper
1/2 cup celery

Brown meat in large heavy skillet over moderate heat for 2 to 3 minutes, breaking up clumps. Add onion, mustard, worcestershire, sugar, vinegar, ketchup, salt, green pepper and celery. Reduce heat to low and cook, stirring now and then, about 40 minutes until flavors mingle. Place 1/2 hamburger bun on each of four plates and ladle meat sauce generously on top. Serve at once.

Chicken Recipes - Chicken Shishkabob Recipe

Cut chicken into cubes( stick it in the freezer for about 15 minutes to make
cutting it up easier). Then throw the cubes into a zippy bag with a bottle
of Kikkoman Teriyaki Sauce, overnight. Layer on a skewer with cherry
tomatoes, onion chunks, green peppers and button mushrooms. The leftover
Teriyaki Sauce goes in a pan on the grill with any leftover veggies in it
and used to baste as the kabobs cook. Cook on low on each side until done
(not more than 5 min. on each side) Serve over white rice with the pan of
teriyaki to drizzle over it.

Chicken Recipes - Tropical Chicken Wings

Tropical Chicken Wings

2 to 3 lbs chicken wings, tips removed
10 oz soy sauce
46 oz can pineapple juice
5 cloves garlic
1 to 2 tsp ginger
1 cup brown sugar, packed

Parboil chicken for 20 minutes. Combine remaining ingredients in a large bowl. Then add chicken. Cover and refrigerate overnight. Discard marinade. Bake at 400 degrees for 5 minutes, turn wings, and bake 5 minutes more.

Lowfat Baked Honey Mustard Chicken

This tangy-sweet favorite is quick from start to delicious finish.
Serves 6 servings
Prep time: 15 minutes
Cook time: 45 minutes
Total time: 60 minutes

Ingredients
6 skinless, boneless chicken breast halves salt and pepper to taste
0.5 cup honey
0.5 cup prepared mustard
1 teaspoon dried basil
1 teaspoon paprika
0.5 teaspoon dried parsley

Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
3. Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes.

Chicken Recipes - butter chicken recipe - Chicken Breast in a Bag

Chicken Breast in a Bag

Ingredients

2 x 200g/7oz skinless chicken breasts
85g/3oz dried porcini
255g/9oz mixed mushrooms, torn
150ml/5fl oz white wine
55g/2oz butter
a handful of fresh thyme
2 garlic cloves, sliced

Method

1. Make a large 'envelope' using wide foil: place two pieces of foil on
top of each other, folding three sides in and leaving one open. Place on
a roasting tin.
2. Preheat the oven to 220C/425F/Gas 7.
3. Mix everything together in a bowl, including the chicken. Place the
chicken in the bag, and pour over the liquid. Close up the final edge,
making sure the bag is tightly sealed and secure. Place the tray on a
high heat on the hob for one minute to start cooking.
4. Bake in the oven for 25 minutes. Remove from the oven, place the bag
on a large plate, take it to the table and open the foil to serve.

Chicken Recipes - Crockpot Chicken Tortillas

CROCK POT CHICKEN TORTILLAS


Meat from 1 whole chicken OR canned chicken or parts
1 can cream of chicken soup
1/2 cup green chile salsa
2 TBS quick cooking tapioca
1 med onion, chopped
1 1/2 cup grated cheese
1 doz. corn tortillas
Black olives

Tear chicken into bite-size pieces, mix with soup, chili, salsa and tapioca.

Line bottom of crock pot with 3 corn tortillas, torn into bite-size pieces.

Add 1/3 of the chicken mixture.

Sprinkle with 1/3 of the onion and 1/3 of the grated cheese.

Repeat layers of tortillas topped with chicken mixture, onions and cheese.

Cover and cook on low 6 to 8 hours or high for 3 hours.

Garnish with sliced black olives if desired.

Chicken Recipes - Chicken Tetrazzini - Slow Cooker

Chicken Tetrazzini Crockpot Recipe


1.. (2-1/2 to 3 lb.) chicken, cut up 1/3 cup flour
1 cup water 1/3 cup butter or margarine

½ cup dry white wine

½ cup light cream

1 med. onion, chopped 1 (4 oz.) can mushrooms, drained

1 tsp salt

8 oz. spaghetti, break into 2 inch pcs., cook and drain

¼ tsp thyme

½ cup grated parmesan cheese

¼ tsp pepper

2T minced parsley

In slow cooking pot, combine chicken, water, wine, onion, salt, thyme,
pepper and parsley. Cover and cook on low 10-12 hr. or until chicken is very
well done. Remove chicken and strain broth into container. Remove meat from
bones. Cut chicken into slivers and set aside. Add butter to slow cooking
pot, turn control to high. Melt butter, stir in flour. Gradually pour in
broth, then cream. Cook on high 30 minutes or until bubbly. Stir in cooked
chicken, mushrooms and cooked spaghetti. Cover and cook on high for 15 min.
Sprinkle top with parmesan cheese. Makes 8 servings.

Note: Chicken and broth may be cooked ahead and refrigerated. Then one hour
before serving time, combine with remaining ingredients and complete.

Chicken Recipes - Cheesy Chicken Tetrazini

Cheesy Chicken Tetrazini

1 c water
¼ tsp salt
1/8 tsp pepper
4 boneless, skinless chicken breast halves
6 c water
½ tsp salt
1 Tbsp olive oil
1 7 oz. pkg spaghetti
1 medium green pepper, chopped
¼ c butter or margarine, melted
2-1/2 Tbsp flour
1 c milk
¼ c dry white wine
1 can cream of mushroom soup
1 4- oz. can sliced mushrooms, drained
2 2- oz. jars diced pimientos, optional
1/8 tsp garlic powder
¼ c grated parmesan
3 c shredded cheddar
½ c sliced almonds, toasted, optional

Combine first 3 ingredients in a saucepan. Bring to a boil. Cut chicken into cubes. Add to saucepan, cover, reduce heat and simmer 10 minutes or until done.
Drain chicken. Combine 6 cups water and next 2 ingredients. Bring to a boil, add spaghetti, and cook until just tender. Drain well and set aside. Sauté pepper in butter in a dutch oven until tender. Add flour and stir well. Stir in milk, next 6 ingredients and 2 cups of the cheddar cheese. Cook over medium heat,
stirring constantly, for 10 minutes or until thoroughly heated. Stir in chicken. Spread half of spaghetti in a greased 9 x 13" pan. Spread half of chicken mixture evenly over spaghetti. Repeat this process. Bake at 350F for 15 minutes.

Sprinkle with remaining 1 cup cheddar and the almonds. Bake an additional 5 minutes.

Chicken Recipes - Oriental BBQ Chicken

Oriental BBQ Chicken

Serves 6-8
3 lbs chicken legs and thighs, skinned and all visible fat removed
1 cup/200g honey
1 cup/200g ketchup
1/2 cup/4fl oz soy sauce
3 cloves minced garlic
1 tsp fresh ground ginger (optional)
(the original recipe called for ginger but I don't care for it and never use it)
1 tsp tabasco sauce (optional; may be increased to taste)


Method:
Mix honey, ketchup, and soy sauce in a mixing bowl, add garlic and
ginger. In a large baking dish, arrange chicken pieces and coat with
olive oil using a pastry brush. Broil under 500 degree broiler until
slightly browned; ( 1-2 minutes) turn pieces over and repeat; brushing
lightly with olive oil again. Turn off broiler and turn on oven to 160C/
325F/Gas 3. Pour the honey mixture over the chicken pieces in the
baking dish, cover with foil and bake for 60-75 minutes. Chicken should
be tender enough to fall off the bone.

All of the chicken should be covered with the honey mixture. If baking
dish is too big add some chicken broth or water to the honey mixture
to make sure all parts of the meat are submerged.

This is great served with sides of candied carrots, steamed broccoli,
and buttered rice or noodles. I often make it for large crowds
(graduations, christenings, and other big parties) using at least 5 lbs
of chicken in large covered roasting pan and let it cook for 2 hours.
Leftovers do not get dried out and taste even better the 2nd day! For
most big parties I make it the day before and just reheat on party
day. I have also made it in my crock pot, omitting the broiling and
just tossing in all the ingredients and letting it cook on low for 8 hours
while I am at work. For a small family use 1 lb chicken parts and
reduce the liquids by half.

Barbecued Thai Chicken Salad

1 broiler fryer chicken (about 3 1/2 pounds)
1 (14-oz.) cup unsweetened coconut milk, (regular or low-fat)
1 Tbs curry powder
1 Tbs lime juice
1 Tbs fish sauce
3 clove garlic, minced
1/4 cup cilantro leaves, chopped
1 recipe Sweet & Sour Cilantro Dressing, (recipe follows)
12 red lettuce leaves, rinsed
1 medium head of lettuce, shredded
1 large red bell pepper, seeded and sliced
1/2 cup mint leaves, torn
1/3 cup finely chopped peanuts Sweet and Sour Cilantro Dressing
2/3 cup rice vinegar
1/4 cup sugar
1/4 cup cilantro, minced
1/4 tsp salt
1/2 tsp chili paste
1/3 cup safflower oil

1 Rinse chicken, pat dry. Split chicken in half with a large, sharp knife. In a large bowl whisk curry powder into coconut milk. Blend in lime juice, fish sauce, garlic, cilantro and brown sugar. Add chicken, turning to coat in marinade. Cover bowl; refrigerate at least 4 hours or overnight.

2 Preheat charcoal grill or oven broiler. Place chicken on grill or broiler, skin side down. Turn after about 10 minutes. Cook until juices run clear or fork can be inserted in chicken with ease, about 30 minutes. Cool chicken slightly; cut into strips.

3 Prepare dressing. Arrange lettuce leaves on 6 plates. Combine strands of lettuce, bell pepper and mint; portion onto lettuce leaves. Scatter chicken on top. Sprinkle with peanuts; serve with dressing. Dressing
1 Combine all ingredients; stir until sugar dissolves. Makes about 1 cup.
