Carnival of the Recipes #175

Cooking for New Year’s Day and New Year’s Eve tends to be a random affair punctuated by comfort food and easy to prepare meals to be eaten at parties and in front of the television.

One of the most well-known traditions is that Black-eyed peas are traditionally eaten on New Year’s Day, often with collard greens or mustard greens. The tradition indicates that the eating of black eyed peas will bring good luck and fortune.

Chicken Recipes - Chicken Trinidad

Chicken Trinidad


2 Frying chickens, 2 1/2 #, split, (I
used 6 skinless breasts & cut
the quanitities down a bit)

1 cup Cilantro sprigs

1 cup Mint leaves, (I used basil)

7 Cloves garlic, finely minced

3 TBS Grated or finely minced ginger

6 TBS Gran Marnier, (I used Cinzano Orancio.
I'm sure any brandy or liquor will
be fine. I chose Orancio to get the
orange flavour, and it was in my
cupboard!)

6 TBS Light soy

6 TBS Honey

1 TBS Lime zest, minced finely

6 TBS Fresh lime juice

3 TBS Olive oil

1 TBS Caribbean Chile sauce, (I used Matouks)

1 1/2 tsp Allspice

1/2 cup Coconut milk

1/2 cup Chicken stock

2 TBS Unsalted butter

8 Firm baby bananas



Make a marinade as follows:

1/4 c. ea. chopped cilantro and basil,
garlic, ginger, soy, Grand Marnier,
honey, lime juice and zest, oil, chile
sauce and allspice.

Mix well.

Measure 1/2 cup, add coconut milk and
chicken stock.

Set this aside for sauce later.

At this point you are supposed to loosen
the skin on the chickens, and work the
marinade under the skin, rub more into
the top of the skin, and let it marinate
for 30 minutes to 8 hrs ...

Too much work, and besides, I used skinless
breasts.

I marinated the breasts in the refrigerator
for about 6 hours.

Preheat the oven to 425 F.

Mince remaining cilantro and mint and set aside.

Spray a shallow roasting pan.

Remove the chicken from the marinade and put
onto a wire rack in the pan.

Roast for 30 minutes.

If you use chicken with skin, roast skin side up.

I roasted he breasts bone side down.

Chicken is done when internal temp. is 170 degrees F.

Transfer to a serving plate and cover with foil
to keep warm.

Peel bananas and split them lengthwise.

Pour off fat from roasting pan.

Melt butter over medium high heat.

When it is sizzling, add bananas.

Raise heat to high and saute until they
begin to brown, about 1 minute.

I didn't want them mushy so I removed them
from the pan at this point.

Pour in reserved marinade that you combined
with coconut and chicken stock.

Add reserved cilantro and mint.

Scrape the pan, and simmer for a few minutes.

If you want a thicker sauce, simmer a while
longer to cook it down.

Taste and adjust seasonings.

Spoon sauce around the chicken and garnish
with the bananas.

Chicken Recipes - Chicken Biryiani Recipe

Ingredients

1 (3-pound) chicken, quartered
2-1/2 cups chicken stock
1 green serrano (medium-hot) chili, seeded and chopped
3 inches fresh ginger, peeled and sliced
2 cinnamon sticks, crushed
1/2 teaspoon sea-salt flakes
2 onions
6 tablespoons ghee (clarified butter)
1-1/4 cups basmati rice
20 green cardamom pods
6 whole cloves
1/4 cup blanched almonds
1/4 cup shelled pistachios, blanched and skinned
1/2 cup dried mango pieces, raisins or sultanas
1 teaspoon coriander seeds, crushed
1 teaspoon cumin seeds, crushed
4 garlic cloves, chopped
1 teaspoon saffron powder or 2 pinches saffron threads, crushed
Fresh cilantro leaves, chopped

Instructions
Place chicken, stock, chili, ginger, cinnamon and salt in a large, heavy
saucepan or flameproof casserole. Bring to a boil, cover, reduce heat,
and simmer 30 minutes or until fairly tender. Remove chicken to a plate
and set aside.

Pour cooking liquid into a measuring cup and add water if necessary to
make 2-1/2 cups.

Quarter onions, then separate into petal-like layers. Add ghee to
saucepan and heat until melted. Add onion and fry until golden. Remove
with a slotted spoon and set aside on a small plate.

Add rice, cardamom pods and cloves to pan; stir-fry 2 minutes or until
rice is browned slightly.

Return chicken to pan; add almonds, pistachios, mango, coriander, cumin
and garlic. Sprinkle saffron into mixture and cook 2 minutes.

Return stock and onions to pan, bring to a boil, reduce to a simmer,
cover, and cook, undisturbed, 12 to 15 minutes. Rice should be tender
and the liquid completely absorbed. Sprinkle cilantro on top.

Note: Though it is usual to remove the skin when cooking chicken in the
Indian way, if you leave it on, the flavor will be richer and even more
delicious.

Yield: 4 servings

Chicken Recipes - Chicken and Green Chili Casserole

Chicken and Green Chili Casserole


2 large onions, diced
2 large green peppers, diced
1 large bag corn chips, crushed
1 pound boneless chicken breasts, sauteed and sliced thin
1---20 oz can black whole beans, drained
1---16 oz. jar Green Chili Salsa
1---16 oz. container sour cream
2 cans (10 3/4 oz) cream of mushroom soup
8 oz. Monterey Jack cheese, shredded
8 oz. Cheddar cheese, shredded


Saute the onions and green peppers together. Layer everything into a 2 inch deep casserole dish bake in 350 degree oven for 30 minutes or till cheese is bubbly and golden.

This is very filling and even better the next day warmed up.

Chicken Recipes - Taco Fiesta Lasagna

TACO FIESTA LASAGNA

2 (14.5 oz.) cans diced tomatoes with mild green chiles, undrained
1/4 cup taco sauce
3 cups cubed cooked chicken
1(16 oz.) can Old El Paso Refried beans
1/2 cup sour cream
12 uncooked lasagna noodles
3 cups shredded colby-monterey jack cheese
1/2 cup chopped green onion
2 tablespoons chopped fresh cilantro
1/4 cup sliced ripe olives (optional)

Spray 13x9 in. glass baking dish and sheet of foil to cover with nonstick
cooking spray. In large bowl, combine tomatoes and taco sauce; mix well.
Stir in chicken. In medium bowl, combine refried beans and sour cream; mix
well. Spread about 1 cup chicken mixture in bottom of sprayed baking
dish. Top with 4 uncooked noodles, breaking to fit if necessary. Spread with
half of bean mixture and 1 1/2 c. chicken mixture. Sprinkle with 1 cup of
cheese and half of onions and olives. Layer 4 more noodles, remaining bean
mixture, 1 1/2 c. chicken mixture and 1 cup of cheese. Top with remaining 4 noodles, chicken mixture, onions, olives and cheese. Be sure noodles are covered. Cover with foil, sprayed side down. Refridgerate at least 8 hours or overnight. ***

Heat oven to 350 F. Bake covered lasagna for 50 minutes. Uncover baking
dish; bake an additional 18-20 minutes or until bubbly and thoroughly
heated. Let stand 10 minutes before serving. Sprinkle with cilantro. If
desired, garnish with dollop of sour cream, chopped tomato and shredded lettuce.

*** note*** the recipe calls for the refrigeration but I went ahead and
fixed it the same evening, mainly due to not reading the recipe completely..., but it turned out wonderful. It is a great idea to fix ahead of time if your going to be too busy to cook the next day.

Chicken Recipes - Lemon Dijon Wings

Lemon Dijon Wings

1/4 cup olive oil
1 tablespoon fresh lemon juice
2 tablespoons old-fashioned style Dijon mustard
6 cloves garlic, chopped
2 teaspoons salt
1 tablespoon freshly ground black pepper
2 pounds chicken wings, separated


In a large bowl, stir together the olive oil, lemon juice, mustard and garlic. Season with salt and pepper. Add chicken wings, and marinate for a minimum of 2 hours, turning occasionally.
Preheat grill, and lightly oil grate.
Grill wings for 15 to 20 minutes, turning frequently and basting with marinade every few minutes.

Chicken Recipes - Chicken Tamale Pie

Chicken Tamale Pie

Ingredients
8 1/2 oz Corn muffin mix
1 c Cheddar or Monterey Jack;
-shredded
1 1/2 c Chicken or turkey; cooked
-shredded
10 3/4 oz Cream of chicken soup
4 oz Chiles, green; chopped
1 c Corn, whole kernel
1/2 c Scallions; chopped
1 Garlic clove; minced
1 ts Chili powder



Instructions 1. Prepare muffin mix as directed on package, adding 1/2 cup
of the cheese with the mix. Set aside. (Do not bake.)

2. Cook and stir chicken, soup, chilies, scallions, garlic and chili powder
in a large saucepan until heated through.

3. Spoon muffin mixture into a greased 2 quart casserole. Spoon hot soup
mixture over muffin mixture to within 1/2" of the edge. Bake at 350 degrees for
25 minutes or until cornbread is golden. Top with cheese.

Chicken Recipes - Slow Cooker Salsa Chicken

SALSA CHICKEN (crockpot)

Put 8 chicken thighs in crockpot with one 8oz. jar of salsa. Cook about 8 hours. Add no water !! Remove the meat from bones and return to broth. Serve in warm flour tortillas with cheese, sour cream, etc. This is also good served on rice.

Chicken Recipes - Green Chicken Enchilada Casserole

GREEN CHICKEN ENCHILADA CASSEROLE

1 dozen corn tortillas
1 can (28oz) las palmas green enchilada sauce
8-9 oz monterey jack cheese(more cheese is good)
chicken (Boiled whole chicken is best)
1 can sliced olives
1 medium chopped onion

Put oil in a pan and heat it up. dip tortillas in it one at a time for few
seconds. moisten both sides. this gives tortillas the right texture so it
will absorb the sauce. Heat enchilada sauce in a pan. pour enchilada sauce
about a 1/2 to cover bottom of casserole dish 9x13. Lay down 6 tortillas
covering dish. Then add chicken (pepper the chicken) onions, olives, and
cheese and more sauce for on top of that. next add the remaining 6
tortillas rest of sauce and top with more cheese. Bake about 350 till bubbly
(about 20 minutes) serve it with sour cream if you like.

Chicken Recipes - Cheesy Mexican Chicken

CHEESY MEXICAN CHICKEN

2 tablespoons butter or margarine
1 6.4 ounce package mexican style rice and pasta mix
1 medium size green bell pepper chopped
1 small onion chopped
2 1/4 cups water
2 14 1/2 ounce cans mexican style stewed tomatoes undrained
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese or cheddar cheese

Melt butter in a large oven proof skillet over medium heat. Add rice mix
reserving seasoning packet. Stir in bell pepper and onion and cook 6 minutes
or until rice mix is lightly browned. Stir in 2 1/2 cups water and seasoning
packet. Bring to a boil. Cover, reduce heat and simmer 15 to 20 minutes or
until rice is tender. Let stand 3 minutes. Stir in tomatoes and chicken.
Bake at 350 degrees for 20 minutes. Sprinkle with shredded cheese and bake 5
more minutes or until thoroughly heated.

Serving Suggestions: Serve with shredded lettuce and guacamole.

Chicken Recipes - Rotel - King Ranch Chicken

ROTEL "KING RANCH CHICKEN"

1/4 cup margarine
1 med. green bell pepper, chopped
1 med. onion, chopped
1 can (10-3/4 oz.) condensed cream of mushroom or celery soup
1 can (10-3/4 oz.) condensed cream of chicken soup
1 can (10 oz.) Extra Hot or Milder Ro-tel
2 cups cubed cooked chicken
12 corn tortillas, torn into bite-sized pieces
2 cups (8 oz) shredded cheddar cheese
1 tablespoon fresh garlic
2 teaspoons of pepper
2 teaspons of Morton's Nature's Seasoning

In a large saucepan, cook garlic, green pepper and onion in melted
margarine, until tender-about 5 min. Add soups, pepper, seasoning,
Rotel and chicken, stirring until well blended. In a 13x9x2-inch
baking pan, alternately layer tortillas, soup mixture and then
cheese, repeating for 3 layers, ending with cheese. Bake 40 min. or
until hot and bubbling. Serves 8

Chicken Recipes - Lemony Chicken Noodle Soup - Chicken Noodle Soup Recipe

Lemony chicken noodle soup

1 small onion, chopped
2 tablespoons olive or vegetable oil
1 tablespoon butter or margarine
1/4 pound boneless skinless chicken breast, cubed
1 garlic clove, minced
2 cans (14 1/2 ounces each) chicken broth
1 medium carrot, cut into 1/4-inch slices
1/4 cup fresh or frozen peas
1/2 teaspoon dried basil
2 cups uncooked medium egg noodles
1 to 2 tablespoons lemon juice

In a small saucepan, saute onion in oil and butter until tender. Add
the chicken and garlic. Cook and stir until chicken is lightly
browned. Stir in the broth, carrot, peas and basil. Bring to a boil.
Reduce heat; cover and simmer for 5 minutes. Add the noodles. Cover
and simmer for 8-10 minutes or until noodles are tender. Stir in
lemon juice. Yield: 2 servings.

Chicken Noodle Soup in a Jar

Christmas Gift Idea - Chicken Noodle Soup in a Jar

Christmas Recipes



Ingredients:

1/4 cup of red lentils
2 tbsp. dried onion flakes
2 1/2tsp. chicken bouillon powder
1/2 tsp. dried dill weed or dill seed
1/8 tsp each celery seed and garlic powder
approximately 1 cup medium egg noodles
1 bay leaf.


Directions:

In a two-cup jar, layer from bottom in the order listed above, then seal the jar.

Write these instructions on your gift tag:

Bring 8 cups of water to boil in large saucepan. Stir in jar of soup mix. Cover, reduce heat and simmer for 25 minutes. Discard bay leaf and stir in 1 1/2 cups of frozen corn or mixed vegetables and 2 cups of cooked, diced chicken or turkey. Simmer for five minutes until vegetables are tender and chicken is heated through.

Chicken Recipes - Tex - Mex Tortilla Soup - Chicken Tortilla Soup Recipe

TEX - MEX TORTILLA SOUP

2 whole chicken breasts, skinned & boned
2 c. water
1 can beef broth
1 can chicken broth
1 can (14 oz.) tomatoes, cut up
1/2 c. chopped onion
1/4 c. chopped green pepper
1 can corn, drained
1 tsp. chili pepper
1/2 tsp. cumin
Crushed tortilla chips
4 oz. shredded Jack cheese
1 avocado, chucked

Combine water, broth, undrained tomatoes, onion and green pepper.
Bring to boiling. Add chicken (cut into chunks); reduce heat. Cover
and simmer for 10 minutes. Add corn, chili powder and cumin. Simmer,
covered, for 10 minutes more.

To serve place chips into each bowl. Ladle soup over chips. Sprinkle
with cheese and avocado. 6 servings. Tastes great!

Chicken Recipes - Stuffed Chicken Parmesan - Chicken Breast Recipes

Stuffed Chicken Parmesan

4 3 oz boneless, skinless chicken breasts (12)
1/4 c. Parmesan cheese (2)
1/4 c. breadcrumbs (2)
Italian seasoning to taste
1/2 c. mozz. cheese (ff would lower points) (4)
1/2 c,loose frozen spinach (or 1 c. fresh)

Preheat oven to 400. spray bottom of glass casserole with pam. Mix parm.
cheese, breadcrumbs and italian seasoning in shallow dish. Cut slit in each
chicken breast and stuff 1/8 of a cup each of spinach and mozz. cheese into
each breast. Roll each breast in breadcrumb mixture and place on greased
baking dish. BAke for about 20 minutes or until light brown and juices run
clear. Serves 4 (5 points each)

Serve over some angel hair pasta and some fat free spaghetti sauce and
you've got yourself a filling and delicious meal.

Chicken Recipes - Chicken Salad Sandwich Mix - Chicken Salad Sandwich Recipe

Chicken Salad Sandwich Mix

1 cup hot chicken broth or 1 cup boiling water and 1 cube chicken
bouillon added to it
1 medium dill pickles chopped fine (about 3 tablespoons)
1/2 cup finely chopped onion (yellow, red or green)
1/2 cup finely chopped celery
2 hard cooked eggs, chopped
1/3 cup mayonnaise
salt and pepper to taste
8 slices whole wheat bread
8 slices tomato
8 lettuce leaves, washed and drained

Put chicken stock in a small bowl and let stand for 5 minutes.
Refrigerate until cold. Add pickles, onions, celery, eggs, mayonnaise
and seasoning. Divide mixture between 4 sandwiches. Serve with
lettuce leaves and tomato slices. Makes 4 sandwiches

Hot chicken Salad

1 chicken, cooked, chopped(or 3-4 chicken breasts, cooked deboned)
2 cups celery, chopped
1/2 cup onion,chopped
1 tablespoon lemon juice
6 boiled eggs, chopped
1/2 cup mayonnaise
2 cans cream of chicken soup
1 1/2 cups saltines, crushed
3/4 to 1 cup chicken broth

Mix all ingerdients together and pour into casserole dish and bake
on 350 degrees for 1 hour or until brown and bubbly.

Chicken Recipes - Golden Chicken Chili - Ground Chicken Recipes

Golden Chicken Chili

Ingredients
2 cups Great Northern dried beans
3 cups boiling water
2 onions, chopped
2 cloves garlic, finely chopped
3 pickled jalapeno peppers, seeded, deribbed and chopped*
1 tablespoon ground cumin
1 teaspoon ground chili powder
1-1/2 pounds boneless, skinned chicken breasts, cut into 1-inch pieces
1 pound summer squash
1 can (15 ounces) hominy OR: corn, drained
1/2 cup reduced-fat sour cream, plus more for garnish
2-1/4 teaspoons salt
1 tablespoon fresh lime juice
1/4 cup chopped cilantro leaves, plus leaves for garnish
2 plum tomatoes, chopped

Directions
1. Combine beans and boiling water in slow-cooker. Let stand while
preparing other ingredients.

2. Add onion, garlic, jalapeno, cumin and chili powder to pot. Place
chicken on top. Quarter squash lengthwise; seed. Cut crosswise into
3/4-inch pieces. Add to pot.

3. Cover and cook on low heat for 7 hours or until beans are tender.
Stir in hominy, sour cream, salt, lime juice and chopped cilantro.

4. Spoon into bowls. Garnish with sour cream, chopped tomato and
cilantro leaves. Makes 8 servings.

Conventional Cooking: Soak beans overnight; rinse and drain. Cook
according to package directions; reserve 1 cup cooking liquid; drain
beans. Heat 2 tablespoons oil in Dutch oven. Add onion; cook, covered,
10 minutes. Stir in garlic, jalapeno, cumin, chili powder, squash,
hominy, beans. Add 1 cup bean liquid. Simmer, covered, 12 minutes. Stir
in chicken; cook 10 minutes. Remove from heat. Stir in salt, sour cream,
lime juice, cilantro.

*Note: For a spicy-hot chili, do not remove seeds and ribs from peppers.
